Fresh two leaves and buds undergo natural withering and full hand rolling before entering a distinctive overnight fermentation in a clay pot at approximately around 30 °C. The porous clay walls create a microenvironment that gently exchanges earthy minerals with the leaves, supports slow oxidation, and balances temperature throughout the process. This slow fermentation gently stresses the leaves, transforming primary catechins into secondary polyphenolic compounds, including thearubigins and theaflavins, which enrich flavor, aroma, and support gentle digestive comfort. Gentle dehydration at 70 °C completes stabilization, preserving the delicate profile of this artisanal tea.
The infusion produces a rich amber-yellow liquor with layered floral aromatics, bright citrus accents, and a warm woody finish. This artisanal fermentation produces a polyphenol content of 16–19%, catechins 3–5% per dry weight, and an antioxidant activity of 290.38 μmol Fe²⁺ equivalents/g. The polyphenolic compounds, together with theaflavins and thearubigins, provide balanced antioxidant potential while gently supporting gastrointestinal comfort, metabolic balance, and a grounding, soothing sensory experience.
